4 cups fresh blueberries
2/3 cup Simple Syrup (See our recipe below)
2 tablespoons fresh lemon juice
1 cup buttermilk
Simple Syrup Recipe [makes one 1 cup]
5 oz organic cane sugar
5 fl oz water
Combine the sugar and water in a small saucepan and stir over medium-high heat. Once you bring to a simmer, just continue to stir mixture until it turns transparent. Once the sugar has totally dissolved, turn off and let cool. You can store extra in a sealed container in your fridge and use for sweetener or in cocktails.
Rinse berries and add to blender or processor. Purée blueberries. Mix in lemon juice and simple syrup. Taste. The precise amount of lemon and simple syrup will depend on how sweet your berries were to begin with. Blueberries are one of the few fruits that will get sweeter as they freeze, so keep that in the back of your mind when tasting. Once the mix passes your taste test, pour purée in your popsicle molds. Layer the blueberry mixture and buttermilk to achieve a nice marbled effect on your final pops. Pop in the freezer for 8-10 hours or until completely frozen and enjoy! Side note: buttermilk also pairs well with strawberries, rhubarb and pears.
